I like fried eggs for breakfast. For many years I have been perplexed by fried eggs in the Philippines. Almost everywhere, except in a first class hotel, a fried egg at breakfast is delivered with the yolk solid and the white crispy around at least the periphery . . . this is not what I desire – I want the yolk runny and the white just cooked (not singed).

On an adventure to Camiguin Island a breakfast menu showed “eggs any style”. I inquired what styles were on offer and within the reply were two options of note: “fried” or “sunny side up”. Being English these two would have been classed as the same – the only other variant would be “over easy”, borrowed from the North American vernacular.

Further inquiry, showed that sunny side up meant fried but with the yolk soft and the white just cooked, whereas fried meant solid and singed.

So now you know: in the Philippines you have two choices for 'fried' egg at breakfast, make sure you order the one you really desire.
